WinSCP - weird letters when editing plists. HELP?!

    I've jailbreaked my iPT4g running iOS4.1 with Limera1n. I've downloaded OpenSSH, Toggle SSH and afc2add (some guy in a YouTube vid said I needed it) on my iPod. I have WinSCP on my computer. I am going to enable HDR, for those who are wondering what I need help for. And believe me, any help are greatly appreciated!

    I have enabled SSH on my iPod, and I using my IP-adress in WinSCP (I am supposed to use the IP-adr shown under Settings -> Wi-Fi, right?), using root as username, alpine as pass and 22 as port. I have tried both SFTP and SCP as File protocols. I click Login and voila, I have access to all the files and directories like \System\Library\PrivateFrameworks\Celestrial.frame work\N81\AVCapture.plist or \System\Library\CoreServices\Springboard.app\N81AP.plist, but when I try to edit the plist, WinSCP only show me weird letters, and not normal lines with normal letters. For an example, the AVCapture.plist looks like this

    and that's all I get. You can look by yourself:
