Howdy All, I did this yesterday, and while it wasn't the hardest thing to do, it still took a bit of time and I felt like it would be worth documenting. First up, make sure you have at least one Google Calendar, and Microsoft Outlook. Unfortunately there isn't anyway to sync Google Calendar with Outlook by default, so you'll have to install Remote Calendars [http://sourceforge.net/projects/remotecalendars/], a 3rd party, free plug in that lets you sync with Google Calendars. Once you have that all set up, add your calendars to the default Calendar folder. (Note: if you have other calendars in there, it may be confusing because it just "overlaps" the calendars, it doesn't necessarily separate them. Plug your iPod Touch into your computer, go to the "Info" tab, and check that you want to sync Calendars. All your data should be there!
