I've just installed Mac OS X 10.5.5 on my PC. My iPod Touch 2nd Generation is windows formatted. How do I sync my iPod Touch with my "Mac" without losing all of my music, apps, etc?

iPod touches aren't formatted like older iPods, so you just need to copy over your library.

Just copy all of your iTunes information over. Easiest way (for most people) is just to put a blank CD and iTunes will ask you if you want to ask you if you want to back up. Then put the CD into your mac and use that back up ...
