I just want to make sure in case I want to go back down to 2.0.2. Is iTunes going to not allow this like they dont allow us going back down to 1.x? I just want to make sure...

Also, will we be able to downgrade to 2.0.x from a 2G iPod touch?

What I REALLY want to know is:

Can you downgrade to 2.0.1 or 2.0.2 from a 2G iPod touch?

I would also like to know about moving back to 2.0.x in iTunes 8. (If someone could provide a link to iTunes 7.7.1 it wouldn't be a problem though.)

As for 2.0.x on iPot 2G, it carries the "iPod2,1" opposed to 1G's "iPod1,1" designation in the firmware bundle. No 2.0.x firmware carries "iPod2,1". So no, it isn't possible.
