is your iPod itself set to your language?
i believe that most widgets run the language from the system if i'm not mistaken.

if you mean like a clock/date widget, yea, you need to open up the html file (which will be in the main folder of the theme) and look for the names of the days (Monday, Tuesday, you can do the math) and change that into your own language.

Yes, I know, that's more complicated, because it requires more editing of the same html script. Also, although most clock widgets function the same theres often (syntax)difference between them.
So, what you could do is look at the release section of macthemes for mobilepod or mobilepod springnav, I know theres 12hr and 24hr html files there, in english and in french I think.
If not, you can send (pm) me your current html file and then I'll do it for you.
Looking for the plug and play version is faster I think, cos I won't be able to look at it until later, like in 6 hours or so.
