First off, try restoring your ipod in itunes, it will upgrade it to 2.1 (the latest stable release) and should probably fix itself.

I had similar problems(including not being able to SSH, internets keep losing connections/not connecting), so one night I reset my router and everything was good again. Give that a shot.

I re-read what you posted and it seems like your device isn't even finding a wireless connection. My questions is, do you have a wireless connection?

Try another version or reboot your router.
