there is one simple reason why i dont Jailbrake my Ipod touch...
I have so much that i have writen in ipods notes, and i know that i can email them to my mac.
But the problem is i really dont want to write them down on my ipod AGAIN after that i have jailbraked it, it is simply to much text.
Ive noticed that itunes does a backup of my ipod when i sync it, is there a way that i can use that? i want to jailbrake the ipod and then use the backup to restore the notes i got.
    Possible or not?

After restoring, resyning you pod with your old ipod backup should bring back the notes text.

Its probably not ment to be jailbraked... those apps are not really very cool.
Its fun to try out but nothing to keep right?

If a remember correctly, iTunes successfully synced my notes back after restoring+jailbreaking.

And I would have to differ on your opinion of jailbreaking. I quite a few apps that I find both entertaining and helpful. MxTube downloads youtube videos onto your iPod so that you can view them offline, I have an app that allows me to keep track of my homework, terminal app to do anything a terminal can do (including spoofing the MAC address, which I need to do because the school network blocked my iPod's MAC address, I well know perfectly why, but yeah). Touchpad allows me to use my iPod as a touchpad for any computer through wifi. There's also the handy flashlight app, that shows a white screen and automatically kicks up the brightness to full, ect ect, and hundreds more.

You really have nothing to lose if you jailbreak, well unless you somehow lose your notes, which I don't believe you will.

I've heard that if you sync a jailbroken iPod, and then restore back that sync onto fresh, some parts remain, such as the fake network thingbo

I said TRACK my homework, not do my homework, that would be tedious and pointless.
