    I currently have:
    Activator
    Backgrounder
    CategoriesSB
    ClockHide
    Downloader (Safari download manager)
    IconSupport
    Infinidock
    Kirikae
    MultiIconMover
    PogoPlank
    PreferenceLoader
    RotationInhibitor
    SbCustomIcon
    SimulatedKeyEvents
    UAFaker
    bosspaper
    libhide
    shrink

My questions are which ones should I remove and which ones are taking up the most CPU power.

Each one takes up about 1/2mb of RAM. Honestly its up to you to decide which one don't you use? I suggest that you don't remove them but disable them in SBSettings. To disable them:

    1) Open SBSettings
    2) Tap the 'more' icon
    3) Go to mobile substrate addons
    4) and tap to turn them off so they don't use RAM.

I would suggest not disabling them or removing them. There are risks that you may be taking by diabling/removing them.

OP just to see how much ram you can save, open SBSettings and open proccesses and check free up memory. Then look at the bottom of SBSettings below the power button and check how much available memory you have.

It says it right on SBsettings:
I once did disable a few and my iPod was stuck on boot logo and had to restore.

    Thats absolutely NOT TRUE

i disable/enable mobile substrate addons very frequently, there is absolutely no risk, yeah it is better to reboot after disabling some mobile substrates like winterboard

The only risk is if if you uninstall/remove a mobile substrate while it is disabled
