The iPhone and iPod Touch use Lithium-Ion (LIon) batteries. LIon batteries are not like the old NiCd batteries that develop a "memory" requiring you only to charge them when they are as dead as possible. Instead, they are happiest when they are kept as fully charged as possible, so plug it in when you have an opportunity and keep it juiced.

Also, as with any rechargeable batteries, they are happiest in moderate temperatures. Try and keep them out of extreme environments (too hot or cold) and it should last you a good long time.

fully discharge and charge the ipod a couple of times to calibrate the level meter. Recharge whenever it's convenient for you, even at an intermediate charge point.

I don't know what sort of phone you have, but most if not all modern cell phones use LIon batteries. It also depends on the age of the battery though. You can usually expect a usable life span of about 2-5 years depending on the conditions under which it is used, how much it is used, how, and how often it is charged.
