Is the mobile user essentially the normal user of the ipod? For example, when an I run my apps normally through springboard, they're run under the mobile user?

Root is basically admin and mobile is a restricted user.

root is supposed to be for systems management. like when you take it into an Apple store and they run the diagnostic it would be run on the root level. Mobile is the basic user level. everything you can do without jailbreaking is run on the mobile level.
