1.1.4 is stable, has nice features, and is what I recommend. That being said, 1.1.2 is near perfect as well.

    It's all about personal preference.

Firmware 1.1.1: This is the easiest jailbreak method, although many users have since upgraded to a more recent firmware. Many applications are supported on this firmware, although some are not as the change in directories affected many applications (/mobile). Firmware 1.1.1 runs somewhat slower than newer firmwares, and doesn't support wiggly icons. January App Pack can be retrieved through Installer. No battery meter in iTunes. Yes, some applications that don't work include MIM by Erica Sadun.

Firmware 1.1.2: Runs slightly faster at 412MHz. More stable. TIFF exploit was fixed, still very to jailbreak though (Oktoprep). More applications are supported, although still no wiggly icons and some other features. Battery life is somewhat longer.

Firmware 1.1.3 & 1.1.4: Firmware 1.1.3 is very similar to 1.1.4, supports wiggly icons. More stable, longer battery life. Many more applications are supported compared to 1.1.1 and 1.1.2. Firmware 1.1.4 is relatively the same, supports wiggly icons, better battery life, etc. 1.1.4 is most recent, not including 1.2.0.

Firmware 1.1.1 can be jailbroken by simply using jailbreakme.com on your iPod touch.
Firmware 1.1.2 can be jailbroken by following 1.1.1 jailbreak and then using Oktoprep.
Firmware 1.1.3 can be jailbroken using ZiPhone.
Firmware 1.1.4 can be jailbroken using ZiPhone, iLiberty+

All jailbreak methods for firmwares 1.1.3 and 1.1.4 are relatively easy.

for now, i guess the best is 1.1.3 since a lot of applications can be installed to it.
1.1.4 would be the best if all of 1.1.3 applications can be use (but it's not...)

I prefer 1.1.4. It seems to be quite stable for me
