I know the first ones that came out are easily jail breakable (untethered) while the new ones need tethered jailbreaks. So what should I be looking out for in the serial number?

Edit: over here their all officially unlocked so that isn't what I am worried about. I just need to know which ones I can have an untethered jailbreak with.

Look at the 3rd, 4th, and 5th digit on the serial number....

939 and under should be untethered; 941 and higher is more than likely a tethered jailbreak (but not always). 940 has some of both bootroms and could be either. Also, this is just a guideline and not a hard rule; you may find some newer ones that are not tethered.
