So which ssh app do I get? If it's not an app how do I get to it?

It's really easy. Just google it.
open-SSH from cydia
first you need to jailbreak you're ipod, then worry about SSH, in fact just search it on cydia and will come up.
then download winscp on your computer configure it to acces your ipod.
SSH is a tweak for your iPod Touch that allows you to access your filesystem from a computer, and manually add and change files. With SSH, you can add applications, music, video, and anything else you want manually without iTunes.
To start, find a way to add SBSettings, either from searching Cydia or finding the right repo on Google.
Second, download a program called Winscp, also found through google.
Once you read a tutorial or two, you'll be ablke to wirelessly login to your iPod and change things around.
SSH is probably the best way to add those applications that you download off of the internet and want to transfer to your iPod. Once you learn the directories, it's very simple. Ask me for any help you need.
