can't say exact difference, but 1.1.1 mobilemail crashes on a 1.1.2 jailbreak. some other slight issues with weather updates and maps, however that might have been due to server maintenance or something.
use 1.1.2 appz. see the howto thread from Shaneypoo for the appz and a guide.

umm, I dont think anything has changed interms of the looks.
But i have noticed that the ones i installed over installer for 1.1.2 are alot more stable than the ones that i put in 1.1.1 over Cute FTP.

I've recently upgraded my jailbroken 1.1.1 iPod to a jailbroken 1.1.2 iPod. All I can say is that it's faster (I don't know how but it just is) and the calendar is 'fixed' although you could do that with the N45AP.plist file, but still. The keyboard also has a new icon for international keyboards (different languages).

As for the iPhone 1.1.2 applications I don't see any change at all, all that you need to do is if you're upgrading to 1.1.2 jailbreak, you need to use the 1.1.2 iPhone applications and not the 1.1.1 - I don't think they work.

with the standard updates, apple updated the frameworks, so some features crash unless you get the apps that are updated for the new frameworks.
