My itouch has 8GB capacity, but I'm unsure as to what generation it "is." It's the one without a microphone readily "installed." Could it be a 1st gen?

just look under Settings->General->Info. If this one number has MC in the front its a "3G"

Look at the back, does it have a circle, or a square?

Under the apple ipod logo, it's labeled "8GB", inside a square.

does it have a flat back? rounded back? if flat then you have a 1g, if rounded you have a 2g or 3g they are the same hardwear.

Here's how to determine your generation. Go through the list, and if the sentence is true, and the next sentence is false, that's the model you have.

If you can't play music without headphones it's a 1G
    If you don't have Accessibility in Settings > General it's a 2G
If you do have Accessibility, but don't have cameras, it's a 3G (actually, I think the 8GB doesn't have accessibility.)
If you have two cameras it's a 4G
