What exactly IS a repository/source for the ipod touch and what benefit are they?

A website or domain that stores packages for Cydia

So if I get good repositories, I get more apps available in Cydia?

are there any 3.0 sites that tell you what the apps on each repository actually are? Or do we have to just install them all and see what they do? I just keep finding information on old 2.x repositories which no longer work.
what about ebooks? any repositories on that?
