Can you open them, or do they crash?

I got the same problem only for me its for the maps application only.
I can open the application and it works just the icon seems to be gone.

Btw what you have longcat is strange becouse that are the apps that are normaly hidden.

Many people that go to the 4.0 get that problem.

Best way to get rid of them is to first try reinstalling them.If that doesn't work restore your iPod.

After you restore it should fix the problem.

You know that video that runs on the Springboard on the iPods at the Apple Store? That's it.
