to fix it (dunno how long this fix works..if the weird colors return then just re-do it):
right click on a song, click "Information" (the first entry in the popup menu) and switch to the "Cover" tab.
click "add..." then cancel the dialogue and close the "Information window" after that it'll be fine or if it's still there just double click on the top of the window to maximize it and it'ldl be fixed

thanks for the reply. double clicking the top to minimize and maximize helps for a little bit but then it just goes back to pink once i do anything in iTunes and i can't seem to find the cover tab

    Do this:
    1. Right click on your desktop
    2. Select "Properties"
    3. Go to "Settings" tab.
    4. Under "Colour quality" change it to '32 bit'.
    5. Hit "Apply" and then "Ok".

    oh well..my mistake:
again bring up the Artwork tab and now double click on the artwork, then just leave the window and iTunes stays normal
