I have been able to connect my Xbox 360 to my laptop and bridge the connections to get an internet connection on my Xbox 360. But now I am wondering if I can use my iPod Touch to get internet on my Xbox 360?

    No

No, that's very unlikely to happen.

kind of off=topic, but on topic... how did you connect your laptop to the xbox360 and get it to recognize the internet connection. I would love to get my XBOX online without having to run a 60 ft cable through the house!

You cant from the ipod, only the laptop
If you do it in reverse for a wireless connection you can send an ethernet connection from your laptop to your ipod
