I'm running the 4.0 GM on my ipod touch 3g 32gb. When the official release comes out monday will I be able to update to it? I want the wallpaper bug fixed. And also Whats the difference between an update and a restore? (if your restoring to a updated firmware) Is one faster?

I just heard this myself, but updating will not erase your media and settings and a restore will.

Update is keeping how your phone is and just upgrading the firmware.

Restoring is resetting everything back to factory settings.

Yes of course you can updated.

A update is updating your firmware.

A restore is putting a fresh firmware onto your iPod.

Make sure you backup and transfer purchases in iTunes before updating, just in case something happens and you have to restore.

Isn't the Gold Master the final release, only sent to developers first? Therefore, if you're on it already, you might not even see an update is available.
