    DISCLAIMER:
    Following any of the steps here CAN muck up your ipod meaning you will have to restore. If you still want to follow these steps then i recommend that any files you are going to replace, you back up first by renaming them.

    Proceed at your OWN RISK.
    Until Customise comes out:

    Change Springboard Springs:
    1) On a graphical ssh client, navigate to /System/Library/CoreServices/SpringBoard.app/English.lproj
    2) Edit the file SpringBoard.strings (if you cant open it, goto google and type in plist to text converter and click on the first link (http://140.124.181.188/~khchung/cgi-bin/plutil.cgi) to convert it.
    3) Search for "slide to unlock" or "slide to power off" and change to whatever you want it to say (removing the text between the tags removes the text)

    Change Text under Icons:
    1) On a graphical ssh client, navigate to /System/Library/CoreServices/SpringBoard.app/English.lproj
    2) Edit the file LocalizedApplicationNames.strings

    i helped discover this! woop!
    all works
    ive now got rid of my slide to unlock text and made my slider a tap to unlock and also made my slide to power off say You turn me off...
    hehe

    That lots of people are going to make mistakes and have to restore over and over and over and over. You get the Idea

    yeah but at least if you know what you are doing (and to be honest josh and i DONT) then you can start to customise your ipod.
    as long as you create backups of anything you replace you will be fine.
    although dont quote me on that...

    bro i made this for my use and thought that we may aswell show other people...They dont have 2 do it, its their choice...plus if u just backup the file then u fine..

    Most people hare Don't backup their stuff and they WILL Do it because they are desperate to skin and theme their devices. (To which I will never ever figure out why.)

    SpringRoll (Sort of like Customize) is coming out soon which does what you are doing. Could've waited.
