    yes u can....

just update...if u have 1.1.1 just update to 1.1.2,since it wont erase the media just the apps

if you're in 1.1.2 update as well, i've personally done this before..

To Delete All The Apps 3rd Party And The Installer Icon U Can Update!
But I Don't Know If It'll Leave A Trace Of Jailbreak...

If U Restore U'll Loose Everything And Any Trace Of Jailbreak

The problem with restore is that you will lose all your data, settings, music and so on. But if you want to keep only what is related to the original applications, you should be able to synchronise most of that with iTunes and get a backup on your PC.

The problem with update is that it will leave 3rd-party applications data and remnants of the jailbreak process.

So the best is probably to restore to 1.1.2 directly, or wait until the next firmware is there and restore to this version.

Umm... SSH in and navigate to your Applications folder and delete everything that didn't come with the iPod. It also works with sftp.

could I just downgrade to 1.1.1 then upgrade back to 1.1.2 or will that still leave trace of jailbreak?

Any restore should give you a fresh start, no traces of suspicious jailbreak activity, Apple's best friend again. And to downgrade to 1.1.1, you need to restore so that's it!

You can also restore to 1.1.2. Err, but I said that before, just ranting here.

    Yes, it should do.
