I have firmware 2.0.1, if I jailbreak it with Winpwn and then want to go back to the totally standard Apple firmware, ie leaving no trace of jailbreaking, can I do that?
Do I just restore on iTunes to do this?
    Thanks

Restoring via iTunes is the best bet.

After you jailbreak you can always restore in itunes using the restore button

Thanks! You're probably wondering why I would want to go back to unjailbroken state, its my wife's ipod and just in case I jailbreak it and she is giving out about it not being the same as normal or something.

There really is nothing to worry about.
As long as your wife doesn't walk into an Apple store and tell them about it (voiding her warranty), no one will really care.

Jailbreaking is not illegal, it just, again, voids your warranty.
