Path Finder - A finder replacment/add on. Dual Pane File Browser, Drop Stack, Tabs & Bookmarks, File List Sorting & Filtering, terminal right in your file browse and more. Basicly everything finder should have and more. Its $39.95, but well worth it.
I try to use schoolhouse Chicken, but I need one that works with iPhone and Schoolhouse. For now I'm trying iStudiez from the app Store.
I don't mean to get off topic but isn't there a thread already like this? I would suggest i-stat and handbreak in any case. EDIT: Found it if anyone wants to take a look at more useful Mac OS X apps. http://www.ifans.com/forums/showthread.php?t=85957&highlight=Ultimate Mac

Also, USB Overdrive X is an excellent piece of software for managing USB mice. It allows you to assign custom actions to any extra buttons the mouse may have. For example, my mouse has two side buttons and the scroll wheel is clickable, so I set it up so that one of the side buttons is used to go back in an application (Safari, Finder, etc.), the other side button activates Exposé, and clicking the scroll wheel opens a new Finder window. It's shareware, but the only difference between the free and the paid version is a nag message at startup.
This isn't really an application so much as customization and I cant believe no one has said it yet. Superdocker It lets you change the color of your dock and view hidden files in finder but the best is that when you click on a link that would normally open in a new window you can set it to open in a new tab.
