Well, I jailbroke my iPod yesterday (on firmware 1.1.4) and everything worked fine, iTunes still worked with it, no problems at all. Now, iTunes won't even recognize that an iPod's been connected, and I tried iPod Access and that didn't notice my iPod either.

Any help is much appreciated, thanks!

    iTunes kills your iPod

The reason your iPod doesn't appear could be the result of many things.
Apple provides a great deal of help on their devices http://www.apple.com/support/.
Uninstall any 'themes' such as bricopacks from your computer ive found that these generally affect itunes syncing capabilities.
Try a different USB port, try restoring from your iPod or you can stick needles in your eyes*
