If I'm right, this isn't the last Macworld Expo but the last one that Apple will be participating in. Is this the case?

That is correct and Apple has pulled out of a Macworld before. It will be more of an educational and developer conference

Well recently Apple has had a small presentation to announce new products. Such as the MacBook and iPod events. But they could just release them on random days like most companies do...

One of the problems with Apple presenting at Macworld Expo was that they were expected to release something major. For business reasons it makes perfect sense not to attend the event so they can release products when they are ready instead of showing us stuff that won't be available for 3-6 months.

Very well may be, I know they were waiting for those new processors that just became available. it looks like something big may be coming.
