Well what can you do with the Bluetooth on the iPod touch. I know that its meant primarily for Bluetooth headphones, but is there anything else you can do with it, like with a pc or cell phone, file transfers or anything??

I'm hoping that in future firmware updates, the iPod touch can utilize Bluetooth to dial a number on a BT-enabled phone... This is like the feature on my previous Palm Zire 72...

Also, it will be good if we can use Bluetooth to transfer pictures from a camera phone to the iPod as well...

U can download BTstack from cydia. Then download WiiMoteDemo and u can connect your wiimote. Also the app makes your iPod recognize ur phone and vice versa but u can't transfer anything. Hopefully u can in the future.
