Basically, I had a jailbroken firmware 1.1.4 on my iPod Touch. Saturday, I updated it to 2.0, restoring the iPod to a clean 1.1.4 beforehand. Since then, however, the theme I had set in Summerboard on my jailbroken 1.1.4 at the time of the restore still appears in some places, the most notable of which is the unlock screen, where I get the theme's background.

So I'd like to know...how could I remove those remaining parts of Summerboard? Would going back to 1.1.4, jailbreaking, installing summerboard and setting the theme to the default theme work, or would it consider that the default theme is what is in my iPod right now? Note that I did try to change my "wallpaper", without any kind of results.

You need to do a clean restore. You restored from a backup of your iPod this time. Just restore again, and set up your iPod as a new iPod.
