    I haven't met anything similar.
But I do have several tips for you that I noticed while using Categories.

    - If you keep the amount of apps in a folder under 55, then Categories won't crash when you try to open the folder to edit its contents.
    - Having lots of apps in a folder will result in a slow down while moving apps in edit mode.
    - Having around 40 apps in a folder is a good number where no crashings happen and no slow down while moving apps will occur.
    - If you are done with editing your folders, better respring via SBSettings. Because most of the time where you hit the Respring button in Categories, your device will freeze and reboot afterwards :\

    One other tip:
Do not put Cydia or Categories in a folder.
Because if you do this and you do a restore some time,
Cydia and Categories will still be hidden in those folders.

About your second problem, I don't know what could cause this.
I have two folders, first has 44 and the other 17.
Maybe it is a special app?
I did not put DemoApp, SBSettings, WebApp in any folder.
I think it is better when those aren't moved.
    Maybe this helped.
