are these ssh apps like the one from installer, if i buy it can i use winscp log in?
The SSH in the App Store is used to SSH into other stuff, not allow the iPod Touch/iPhone to be SSHed into.

If you want to SSH into an iPhone or iPod, you have to Jailbreak - otherwise you don't have the permissions ot access the rest of the file system beyond the Media directory, if that. As Teslanaut notes, it's only an SSH -client- which lets you SSH into servers on the Internet, rather than an SSH -SERVER- which is want would be necessary to log into the iPhone.
I seriously doubt if Apple would like people to look at the interiors of the iPod at all. That's their style isn't it? All secretive and mysterious...

I'm not sure.. can you jailbreak a 2.0 firmware?
Yes. Search for WinPWN, Pwnage Tool, or QuickPWN.
Those are used to Jailbreak the 2.X Firmwares.
Can you use ZiPhone? I'd prefer not to switch jailbreaking methods haha
Not for 2.0 you don't. If you don't feel comfortable jailbreaking by clicking a few buttons, then just stick with unjailbroke.
