I just installed Spirit on my jailbroken 3.1.2 iPod Touch. After doing so I'm stuck at the connect to iTunes screen. What do I do to fix this?

Did you have the Blackra1n jailbreak on it before installing Spirit? Surely something did not go right and your iPtouch is still in tehered mode.

Yes. And I tried running Blackra1n again but that just shows that picture when you run blackra1n and then it reboots.

    Restore first.

From the front page, in regards to Spirit jailbreak:

This seems credible to me. Backup your iPod in iTunes, restore, close iTunes and run Spirit once more. Let us know if this works.
