can't you just get jpgs and add it as photos?

You can, but you have to play with the image size settings and etc. when importing. I really haven't looked much into it, but I tried doing the pdf to iPhoto. It looks great initially, but the words become too pixelated when I zoom in to read the file.

I've been using Google Documents and that seems to work pretty well. If I know I'm going to be out of WiFi and will need documents, I'll open up a bunch of Safari windows and keep all the documents I need open.

havent' played around with PDFs but with text files, I just use winscp to connect to the touch, transfer over some text files, and then use MobileTextEditor + MobileFinder to open and view them

Yes, it is possible for txt, pdf, and html files to be sent to the Ipod touch over wifi (that's how I do it).

I prefer viewing the files using Safari (which has landscape viewing capabilities) and it is working flawlessly.

Some threads to help you out:

    General Guides:
http://www.ifans.com/forums/showthread.php?t=3182 (read the whole thread for hints on increasing the harddisk size allocated to documents. Also, you can optionally ignore the PDF application and just use Safari instead).

    Another guide:
    http://www.ifans.com/forums/showthread.php?t=5701&highlight=pdf*
    And another:

Note: each uses their own preferred software to connect to the Touch, pick your favorite.

    Cheers,

P.S. I am yet to update to 1.1.2 so I am unsure about all the applications (such as Apache) compatibility with it.
