    Ok here are some steps to see 2 spring boards at once. (Done on 1.1.4}

    1. Go to page 2 of your springboard, (if no page to, make one)
    2. Start sliding to page one
    3. Half Way to page one tap the top right side of your screen.
    4. Let go without sliding anymore.

    Pretty sweet and trivial.

    Yep I figured this out on accident when I had my iPod jailbroken.

    You can do the same thing by double tapping the home button between any page. So instead of tapping the top right, double tap home and then close the music player thingy and you have the same effect.
