I decided to upgrade to from 1.1.1 to 1.1.2 (i know it gets rid of the jailbreak).

However now after it restarted and its on the "Slide to unlock" screen with the battery image, it keeps showing the little loading icon in the middle, than it beeps, and it repeats this process on a loop. What is it doing now? It's been doing it for a few mins now...I want to know if i f-ed it up and should just restore it to fix it or just let it finish whatever it's doing (if it ever does finish)

This loop of death can happen when you install the mail application on 1.1.1 before updating.

    From the jailbreak README:

Step 3b: Prevent SpringBoard crash on previous hacked iPod touches

If you have installed MobileMail on your iPod touch, there is a chance an update to 1.1.2 will
render your device inoperable until a restore. This issue can be prevented by switching Auto-Check
    off.

    - Go to General->Mail->Auto-Check. Set it to Manual.

If you forget to do this step and update, proceed with the jailbreak in step 5 (even though
SpringBoard is unusable) and we will fix it for you.
