When I looked a little closer to my screen I saw a "flickering" effect...
I don't know if flickering is the right word, but it's like a very low refresh rate.

Especially the dock area has it,

is this normal, or do I need to send it back?

Restore it to a non-JB firmware and see how it goes.

    will do,
So the screen problem could be related to JB'ing?
Will it reoccur when I JB it again? or is there a chance that the next time there won't be any effect?

I went through 3 or 4 ipod touches, and they all seemed to have this problem (all non-jailbroken). I thought it was the light sensor but I turned it off and still had the problem.. so I'm of no help, but I don't think it is just you/a JB issue..

well, I compared mine with the 1G touch of my mother, and she doesn't have the problem.

    Should I return it?

    Un-select "Auto Brightness" in settings.
