Does anyone know how to fix this?

And by kill, I mean once I download SBsettings, all of a sudden the wallpaper option is gone from the settings app. I've tested this with 3 different iPods all on 3.0

I haven't checked, but a workaround is to go through the photos app and set your wallpaper from there.

    Works fine for me.

Obviously you must have installed something else that messes with Settings.

    Hello...

Set the MMP Flip for 3.0 off and the wallpaper option will be back...

go to the /Applications/Preferences.app using like ssh or iFile etc. and rename Settings-iPod.plist to Settings-iPod.plist.bak and then copy Settings-iPhone.plist to Settings-iPod.plist. You can see Wallpaper option. but, Preferences looks like iPhone's one not iPod.

Huh, I thought the Wallpaper option in Settings was simply removed in 3.0 (note: I also installed MMP Flip)

nevermind, it's more convenient to do it through the Photos app anyway.
