I should know this, but everytime I go to save a picture to the iPod using the computer, I drag it into the folder all my other pictures are in, and it's gives a caution sign, not letting me drag drop/copy. Do I have to turn on disc access or something to get this to happen??

you have to sync your photos thru itunes. Put all the ones you want into one folder and direct itunes to that folder

That's not how pictures are added, you need to Sync them with iTunes. All existing photos [except from the Camera Roll and the Saved Photos albums] will be deleted.

Where do you get the Caution Sign? In iTunes or your computer. Also what format are the files?

*sigh* I hate Apple. Why can't the iPod show up as removable storage like in the good ol' days? Haha.
