Hi, I was installing apps on my touch when it suddenly told me that I was running low on disk space. I checked and I have over 12 gigs free. What's going on?

See my avatar up there? That's what happens to me when people don't search... <sigh> Please search in the future.

Now, in short - there are 2 partitions on the iPod Touch. One for apps & the OS and one for media. The OS/app partition is limited to 300MB. What you need to do is install BossTools which'll allow you to move some stuff onto the media partition and free more space. If you need the source for the BossTool, go to the Applications forum and look for the sticky at the top called the Ultimate List of Sources...
