No idea what you guys are on about.
Neither Halo 3 nor Halo Reach on the 360 give the option to turn it off.
The "auto-aim" setting in the Xbox dashboard does nothing and only adjusts defaults if a game you play in the future lets you turn it off. But if it doesn't, it will remain on. Every single console FPS forces players to use it in multiplayer, while some here and there let you disable it for campaign.
You also get bullet magnetism and much larger hitboxes, where the bullets curve towards enemies when you fire them.
If either of the Halo's let you turn off aim assist (which I still think is not on all the time), I would.
