Is restoring your ipod touch after jailbreak remove 100% of your jailbreak and your iPod is like brand new?

Yes, it will wipe out all of the jailbreak, but to be sure, do the restore in DFU mode. There are tutorials to put your iDevice in that mode.

What does DFU mean and why is it better than normal restore?

    Device Firmware Update

It erases everything on your iPod.

A normal restore might leave your fake carrier settings.

Apple will only sign firmware upgrades to the latest firmware.

If your attempting to restore to the latest firmware (currently 4.1), then apple should accept the restore and restore you to 4.1

They should accept the restore even if your jailbroken.

Simply DFU to 4.1 to the latest firmware and your the ipod will have no traces of a jailbreak.
