    why!?

maybe i forgot about restoring on itunes because i was eager to erase on the ipod itself.

instead of asking why!, can you people help to solve the problem at hand?

how do i make it stop? how do i get my ipod back to homescreen?

You have to wait till it's finished, or put it in DFU mode and restore.

Hardboot it by holding home and sleep for 10 sec.
Than put it in DFU --┬╗restore

Huh ... no holding both button isnt the way to DFU
If you were un DFU Itunes will find your device in recovery mode but you said that when you plug it it resumes whatever you were doing. I really doubt its already in DFU
So just try to harboot it (meaning force it to turn off) and put it properly in DFU and restore.
