I can't seem to replace the generic music note picture that cover flow uses for albums without artwork. I've kept the dimensions the same and also set the permission to 755, but it still won't replace the picture! Halp meh!

something tells me you're missing the point of this attempted action.

OP is asking to replace the default graphic that the system uses with something of his choosing. You know.. the grey image with the Notes that indicate that no album artwork was set for the album? The OP is not, however, asking how to replace individual album artwork images.
    see attached image.

like change "default" uknown artwork with anoter like a questionmark etc?
in itunes, add a optional picture for each song then its theoretically the default image.
but it takes less effort to get the "real coverart albums" so why bother?

you're making it harder than it has to be. did you read my post?

the only thing you're required to do is locate the one, single, solitary, sole, distinct image that is used for the default u/a image and replace it with an image of your choosing.

we're not talking about using itunes for any of this. it's somewhere within the artwork stored in the filesystem.. probably called "UnknownAlbumArt.png" or something similar. i just have not gotten a chance to locate it yet.

ouch , my apologies. I was missing the point. I have seen other people change this graphic but i am not sure how to do it myself , personally i have enough album artwork so i rarely ever see the default graphic

    file location is:
    private/var/Applications/MobileMusicPlayer.app
    CoverFlowPlaceHolder44.png

I inverted my image (black on white) reloaded it, changed permissions (755) and now the placeholder has disappeared completely in coverflow. Oh, well.

Get back to you if I figure it out. Wrong permissions maybe?
