Ok, I have been wanting to jailbreak this baby for a while but I have a few questions, I do have everything ready....

-Will I need to start with a restored iPod or can I do it with all my music and apps on my iPod?
    - Will I lose anything from iTunes? Im not really concerned with the music being lost on iTunes but will I lose any apps?
-What if something goes wrong during the jailbreaking process? What can I do?
    Thanks guys!

    1. You can start the jailbreaking process with your iPod as-is.
    2. If your media and apps are on iTunes on your computer, you won't lose anything.
    3. If anything goes wrong, you can always put it in DFU and restore.

Is there any way Apple can find out my Touch has been jailbroken if I have done a restore?

If you set it up as a new iPod, no, they can't.
