I read that if your iPod screws up, you can do a system restore or something and it should be back to normal?

This doesn't remove apps or anything though, right?

Also, do the pros outweigh the cons for jailbreaking? Am I risking anything by jailbreaking, because I really don't want anything to happen to my iPod touch 2G.

When you restore, Everything gets deleted and it's like a fresh iPod.
    So it does remove apps.

Then you will be able to download them from the AppStore after you restore...

nope, app store will tell you that you've already purchased the app and can download again for free.

Apps you buy are stored on your computer, so even if you restore your iPod iTunes will automatically re-sync the applications to your iPod.
