not to big of a chance of anything going wrong

the chance of you being able to fix anything that does go wrong, 100%

    Correct.

Unless you throw your iPod against the wall or drown it in water, you'll be pretty safe jailbreaking it.

If anything goes wrong (freezes, crashes) you can simply restore it back to normal.

    I prefer QuickPwn, it's faster.

Yeah, I'm pretty sure you can sync your apps.
Depends if you pirated them or not.

If not, you should have no trouble.

The 16xx errors are iTunes or USB-related and either incredibly hard or insanely easy to solve, even Apple isn't sure on how to properly solve them.

    Things you can try are:
    • Change USB ports
    • Use DFU Mode
    • Remove the SIM card
    • Downgrade iTunes and restore to 1.1.4
    • Completely turn off and unplug your computer for five minutes before trying again
    • Use another computer
