Put it in DFU mode, and Shift+Restore.

I am having this exact same problem, I don't realy want to jailbreak my ipod I just want it back to where the head unit on my motor cycle can control the ipod, 3.1.2 is the worst update in my opinion.
    Thanks
    Terry

    I Found A Way...

i have found out a solution for downgrading from 3.1.1 or 3.1.2! Thanks to Nutronic

    1. download and install Quickfreedom. (http://www.[PIRACY.mf].com/download.php?y5ytjc0tfgy)

    2. download the 2.1.1 firmware. (its an option in quickfreedom.)

    3. install libusb. (from quickfreedom)

    4. hit next

    5. uncheck install installer.

    6. hit next. ( NOT make custom firmware)

    7. put your iPhone/iPod Touch in DFU.

    8. then click pre-jailbreak.( it will do some stuff i don't understand.)

    9. restore in itunes with the 3.0 firmware.

    10. jailbreak with redsn0w^^

Enjoy and if this doesn't work just tell me cuz for me it worked!^^

if you use iTunes 8.2, theres a better chance of downgrading without errors. you dont need any other programs.
