Would it be possible to use the maps without wi-fi? like saving the map to the ipod and making maps read it from the directory you put it in?

If you use the Apple Maps app - then yes. It will remember the last map you viewed and you can zoom in or out even when not connected to the net.

If you are thinking about downloading every single picture taken by every single satellite that googlemaps uses, then you're an idiot. The last map/location you viewed is saved into the cache, but only a certain amount of area. So, as the man said, you can zoom in and out, but not all the way.
