So currently I have the HDR enable plist hack and the 720p plist hack (adds .23mp) on my ipod. But I've also noticed that user ss2man44 has release the mobile substrate version of this. What are the pro's and con's of using either one? and which method would YOU use?

I would use plist method, plist will use less system resources and memory. Not much but it adds up. Dylibs are nice if you would like to turn it on and off easily, also its already tested, if you screw up the plist then your screwed until you find a solution.

Mobile Substrate method only uses up an incredibly tiny amount of RAM upon opening the camera app then it doesn't use up any more resources at all. It's also safer and easy to remove (like picklejw said).

Also, it gets rid of the flash controls and doesn't mess with your device's capabilities, which are used by some apps/tweaks to identify your device.

Plist hack is like as if it was in the device already and mobilesubstrate is like using winterboard to theme instead of wallpapers.

    Conclusion: plist ftw. Always

plist is free ( and always will be), uses no extra resources and works for the stock camera app as well as other apps that uses the camera, the cydia tweak does not

I like plist edits over any install-needed tweak
