Disappointed that there doesn't seem to be a way to password protect my email accounts. Does anyone know of a solution?

Don't enter a password in the account settings, or the wrong one.

This way when you try and sync the Authentication will fail and ask for a password

yeah, or just passlock your device so you have to put in the code when you slide to unlock.

If your ipod is jailbroken then use lockdown from the bigboss cydia repo to lock the mail app

Get LockDown from Cydia and it will allow you to put a pass code on any app you want.
