Is there any way to make Safari open .html files offline?
Could be a useful way to put ebooks on iPod Touch

Unfortunately it's not possible with Safari, they had security issues with this so they removed the feature. There are quite a few threads with this, what you can do is install an Apache or Lighttpd server on the iPod, store the HTML files in the corresponding directory, and browse to 127.0.0.1.

There is an eBook application, maybe you can check how it works and add your own contents, it's probably better than the above solution.

Apache is in theConceited Software repository - look in the Network folder.
Books (the eBook application) is in the Ste repository - look in the Productivity folder.
